This FAO report shows that countries in Europe and Central Asia (ECA) have progressed from dealing with undernutrition and micronutrient deficiencies to coping with degenerative diseases associated with increased dietary fat, sugar, meat and dairy, and processed foods—a transition often accompanied by a more sedentary lifestyle. The report explores several promising policies (biofortification, nutrition education, and effective food safety legislation) designed to address food insecurity and nutrition, and discusses how they can be tailored to the income and nutrition profile of different countries.
